Hey guys! So I HAD to share this delicious recipe I found. Many of you know that I am working on going completely vegan! I know, it's a big change, but I am so excited for this step in my life. Since becoming a vegetarian almost 2 years ago, I have been researching awesome recipes to make. Of course, I had to find vegan recipes for my favourite comfort foods too. My partner's birthday just passed, and with Easter a few days later, I decided to make vegan chocolate cupcakes! Although this recipe is meant to make a double layer cake, cupcakes worked just as well. I even made some homemade icing from this recipe! Which by the way, was absolutely delicious.
What I loved most about this recipe was that it didn't have any weird ingredients that you can't find at your local grocery store. Most things I already had in my house, which was super convenient. The only thing I found slightly odd was that the recipe included apple cider vinegar! But as the recipe indicates, apparently it helps the cake rise. The recipe is by a wonderful blog called It Doesn't Taste Like Chicken. She is the cutest vegan blogger and her recipes are TO DIE for!

This recipe made about 36 cupcakes. And I still have some of the homemade icing left over. I gave some to my family (who are not vegan or vegetarians) and they said you couldn't even tell the difference! I truly had such a blast making these, and loved being able to lick the bowl clean after (no raw eggs)!
If you get a chance, I highly recommend giving these a try. I promise they are the best chocolate cupcakes you'll ever try!
